Debris Hills is more than just tradition—it is a quest. In our Blend Lab, we experiment with ideas that are sometimes wild, sometimes subtle, but always curious.

 

This is where the first sketches of new blends are created:

 

• Lambic that blends with unexpected ingredients

•    Fruit and herbs from the Kempen region that give it its own terroir voice

•    Barrels that previously held wine, cider, or spirits

•    Seasonal projects that only appear once

 

Not everything ever sees the light of day. Some experiments remain secret, others grow into an official release. But every test blend tells us something new and brings us closer to the next discovery.

 

The Blend Lab is our playground. A place where tradition and imagination meet—and where you may soon be able to taste the results.

 

🍯 Blend Lab – Mead

Mead feels like an ancient drink to me. Just honey, water, and yeast – nothing more – and yet it opens up an entire world. In the Blend Lab, I’m exploring how those floral, rounded notes can work alongside lambic or saison. Every batch of honey carries its own terroir: sometimes floral, sometimes spicy, sometimes almost caramel-like. That makes the experiment exciting – no two meads will ever be the same.

 

🌾 Blend Lab – Saison

Saison feels like a bridge between tradition and experimentation. It’s a beer that comes out dry, refreshing, and often a little spicy, but at the same time flexible enough to shape a blend. In the Blend Lab, I want to see how saison weaves itself into fruit, into lambic, or even into mead. It has that lively character that sets everything in motion – perfect to play with.

 

🍇 Blend Lab – Wine

With wine, the Blend Lab becomes a dialogue between worlds. Grapes don’t just bring acidity and fruit; they also add structure and length through their tannins. Sometimes soft and ripe, sometimes sharp and strict – depending on the grape and the harvest. For me, wine is the elegant counterpoint in blends: it can balance roundness with focus, and turn simplicity into depth. Every bottle feels like a story I get to continue.
